Earth Day Sugar Cookies

My famous sugar cookies took a whole new look this week when we celebrated Earth Day at school. I was signed up for snack mom this week and looked everywhere online to find a creative idea for Earth day that the preschoolers would enjoy. I’m not one for detailed cookie decorating or using lots of frostings so I came up with just dying the cookie dough green and blue to form sugar cookie “globes”. It worked like a charm and was very easy.

Sugar Cookie Recipe:
1 pkg. (8 oz.) Cream Cheese, softened
3/4 cup (1-1/2 sticks) butter, softened
1 cup granulated sugar
2 tsp. vanilla
2-1/4 cups flour
1/2 tsp. baking soda
Green & Blue food coloring
Green & Blue sugar sprinkles

Once the dough is combined make half blue and half green. You will need to form a log with blue in the middle and two green stripes around the outside. Refrigerate for 30mins. Cut ¼ inch circles. You can use your hands to form circles. I used a biscuit cutter and pressed the dough into it to form my circles. Sprinkle with colored sugar and bake for 10mins. @ 350F.

How very cool and creative and way less messy then if you used frosting. Have I told you lately how wonderful you are?
